Lemon Cod.


Directions:

    If fish fillets are large, cut into serving pieces.

    Mix butter and lemon juice.

    In another bowl, mix flour, salt and white pepper.

    Dip fish into butter mixture; coat fish with flour mixture.

    Place fish in ungreased square baking dish, 8x8x2 inches.

    Pour remaining butter mixture over fish; sprinkle with paprika.

    Cook uncovered in 350 degree oven until fish flakes easily with fork, 25-30 minutes. Garnish with parsley sprigs and lemon slices if desired.

Best Pot Roast


1 (4 -5 lb) beef roast , any kind
1 (1 1/4 ounce) package brown gravy mix , dry
1 (1 1/4 ounce) package dried Italian salad dressing mix
1 (1 1/4 ounce) package ranch dressing mix , dry
1/2 cup water

Directions:

Place beef roast in crock pot.

Mix the dried mixes together in a bowl and sprinkle over the roast.

Pour the water around the roast.

Cook on low for 7-9 hours.

Scalloped taterz





1 fresh garlic clove , halved
6 medium red potatoes , peeled, thinly sliced
2 tablespoons margarine , melted
1/2 teaspoon salt
1/8 teaspoon black pepper
1/2 cup shredded gruyere cheese
1 cup skim milk
nonstick cooking spray , to grease pan

Preheat oven to 425°F.

Rub garlic halves all over the inside of a medium sized casserole (an oval dish or an 11x7" pan); discard garlic or save for another use.

Grease pan with nonstick cooking spray.

Place half of the potato slices in the pan; drizzle with 1 tablespoons margarine.

Sprinkle with 1/4 tsp salt and 1/16 tsp pepper, then top with half of the cheese; repeat.

Bring milk to just a boil over low heat in a small pan; then immediately pour into the casserole.

Bake,uncovered,for 40 minutes or until potatoes are soft.

Oven crisp wings




1/3 cup flour
1 tablespoon paprika
2 teaspoons garlic salt
1 teaspoon black pepper
1/4-1/2 teaspoon cayenne pepper
3 tablespoons butter
3 lbs chicken wings , tips removed

Cut wings at joints.

Preheat oven to 425 degrees.

Be sure wings are thawed and dry them well with paper towels.

Combine flour, paprika, garlic salt, black pepper and cayenne pepper in a plastic bag.

Shake to mix ingredients and add wings.

Line a large baking sheet with Release foil and melt the butter on it. ( Makes for easy clean up.).

Add wings to pan and turn to coat.

Bake for 30 minutes.

Turn wings over and bake for 15 more minutes or until crispy and done

Bourbon chicken (found on food.com :)


2 lbs boneless chicken breasts , cut into bite-size pieces
1 -2 tablespoon olive oil
1 garlic clove , crushed
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/3 cup light brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1/2 cup water
1/3 cup soy sauce

Heat oil in a large skillet.

Add chicken pieces and cook until lightly browned.

Remove chicken.

Add remaining ingredients, heating over medium Heat until well mixed and dissolved.

Add chicken and bring to a hard boil.

Reduce heat and simmer for 20 minutes.

Serve over hot rice and ENJOY.

Toasted Ravioli


*Makes 24*


2 dozen beef ravioli or 2 dozen cheese ravioli or 2 dozen other filled ravioli, thawed if frozen
2 eggs, lightly beaten
1 cup Italian seasoned breadcrumbs
parmesan cheese
vegetable oil (for frying)
marinara sauce (for dipping)




1 Cook ravioli in boiling salted water until they float to the top; remove from water and drain.
2 Set aside to cool.
3 Heat vegetable oil in fryer at least 2" deep to a temperature of 375 degrees.
4 Dip ravioli in beaten egg, then cover in breadcrumbs.
5 Fry in batches in hot oil until golden brown, about 5 minutes; drain.
6 Sprinkle hot ravioli with parmesan cheese.
7 Heat marinara sauce and set aside in serving bowl.
8 Serve ravioli with dipping sauce.

Meat balls


2 lbs lean ground beef 8 -10 slices white bread, broken into small 1/2 inch pieces (or you can use rolls or any stale bread you have and want to use up) 2 eggs, slightly beaten 1/2 teaspoon garlic powder (or to taste) 1 teaspoon italian seasoning (or to taste) 2 teaspoons parsley flakes (or to taste) 1/4-1/2 cup grated parmesan cheese (or Locatelli) 1 -2 teaspoon salt 1/4-1/2 teaspoon black pepper olive oil or vegetable oil (for frying) 1 Mix all ingredients gently in a large bowl until well combined. 2 Roll meatballs 1 1/2- 1 3/4" in diameter. 3 Heat about 1/4" of oil over medium heat in a large frying pan. 4 Fry meatballs in oil, rolling frequently, until evenly browned and juices run clear. 5 Drop meatballs in your favorite sauce and let simmer for awhile to flavor sauce or just serve with your favorite pasta and sauce. 6 Tip: You can also bake or broil these if the frying part is too much of a hassle--
